Veggie Pesto Sandwich


Two pieces of whole grain bread

Veggies for topping (I prefer cucumber, Kalamata olives and red pepper)

For pesto:

1 medium avocado, skin and pit removed

2 tbsp olive oil

1 cup frozen spinach, thawed

3 cloves garlic

1/4 cup cashews

2 tbsp lemon juice

1/2 tsp fresh ground black pepper

1/4 tsp salt

1 tsp ground flax seed


  1. Put all ingredients for pesto into a blender or food processor and pulse until smooth
  2. Generously spread pesto onto each slice of bread
  3. Top with veggies
  4. Grill each side of the sandwich on a medium heat pan stovetop for about 2 minutes each side.
