Thai Chicken Roast


1 tbsp garlic

1 tbsp ginger

1 tbsp galangal

2 stalks of lemon grass

Fresh or powdered turmeric to taste

2-3 lemon leaves

2-3 red chilies

Salt to taste

1 tbsp olive oil

1 whole chicken


  1. Make a paste out of all the ingredients mentioned above (besides the whole chicken).
  2. Rub this mix generously on your chicken and set aside for 30 minutes
  3. Roast in a 375F degree oven for 40 minutes in a roasting pan.
  4. Check that internal temperature of chicken is 165 degrees F
  5. Serve with your favorite vegetables
