Stuffed Bell Peppers

Ingredients:

4 large bell peppers, any colors

8oz extra firm tofu

1 cup ground turkey

1 small onion, chopped

1 tsp ginger

1 tsp garlic

1/2 tsp turmeric

1/2 tsp curry powder

Chili powder to taste

1 cup of cheese to top

1 tsp flax powder

1 tsp olive oil

Instructions:

  1. Chop your onions fine and sauté in heated olive oil along with ginger/garlic paste and all the dry spices.
  2. Add your ground Turkey to this and let it brown, add crumbled tofu to this. Sprinkle your flax powder on this.
  3. Cut your bell peppers and core the inside. Now heat salt water in a saucepan and blanch your bell peppers. Dry the inside well and add the stuffing and top with cheese.
  4. Line them up in a baking tray and bake at 350 for about 20 minutes till the cheese has melted.
