
Ingredients:
4 large bell peppers, any colors
8oz extra firm tofu
1 cup ground turkey
1 small onion, chopped
1 tsp ginger
1 tsp garlic
1/2 tsp turmeric
1/2 tsp curry powder
Chili powder to taste
1 cup of cheese to top
1 tsp flax powder
1 tsp olive oil
Instructions:
- Chop your onions fine and sauté in heated olive oil along with ginger/garlic paste and all the dry spices.
- Add your ground Turkey to this and let it brown, add crumbled tofu to this. Sprinkle your flax powder on this.
- Cut your bell peppers and core the inside. Now heat salt water in a saucepan and blanch your bell peppers. Dry the inside well and add the stuffing and top with cheese.
- Line them up in a baking tray and bake at 350 for about 20 minutes till the cheese has melted.
