
Ingredients:
3 beets
3/4 tablespoon oil (avocado or olive)
1/4 tsp kosher salt
1/8 tsp black pepper
Instructions:
Peel the beets and depending on the size, cut into 4 or 8 pieces each. Even sized pieces of about half inch thickness
Transfer them to a bowl. Add the oil and seasonings. Toss them well, so they are all coated with the seasoning
Preheat oven to 400F. Transfer the beets to a large sheet pan. You can also add the oil and seasoning on the sheet pan itself.
Spread evenly so they do not overlap. Cook for about 35-45 mins. Removed from over and serve warm.
