
Ingredients:
2 T olive oil
4 garlic cloves, minced
1 small onion, diced
1 cup chickpeas
2 cups vegetable broth
2 T fresh ginger, minced
1/4 t cayenne
1/4 t turmeric
1/2 t cumin
1/4 t garam masala
1 cup fresh spinach
salt and pepper
1 cup cooked gamut or your favorite rice
Small handful cilantro, chopped
Instructions:
- In a large saucepan, bring vegetable broth to a simmer and add the chickpeas. Cook for about 40-45 minutes or until liquid is mostly absorbed and the chickpeas are soft.
- In another saucepan, heat the oil and sauce the onion, garlic and ginger for 1 minute. Add the cayenne, turmeric, cumin, garam masala and fresh spinach. Cook 1 minute.
- Stir in the chick peas and let the pan simmer for 5-8 minutes. Season with salt and pepper.
- Add the cook gamut or cook rice.
- Top with cilantro
