
Ingredients:
1 tortilla
1/2 cup black beans
1/2 cup onions
1/2 c up bell pepper
1/4 cup shredded chicken
Shredded cheese
1/4 tsp olive oil or avocado oil
To taste: cilantro, jalapeños, cumin coriander powder, turmeric, chili powder, salt
Instructions:
- Sauté your onions, bell peppers, black beans and shredded chicken. Season with cumin, turmeric, chili powder and salt.
- Note: you can make this ahead and keep it in the refrigerator.
- Spread this mix every on you tortillas, top with cilantro, jalapeños and cheese and bake in a 350 degree oven for 5-10 minutes, or until cheese is melted.
