
Ingredients:
1 tbsp extra virgin olive oil
1 can butter beans/cannellini beans
1 cup pearl barley
1 can chopped tomatoes
1 cup marinara sauce/Italian sauce
1/2 yellow onion, chopped
3 garlic cloves, chopped
1 tbsp all purpose flour
salt, pepper and red chili flakes, to taste
2 cups veggie broth
1 cup milk
fresh Italian herbs
1/2 tsp rosemary
Instructions:
Heat a large saucepan with oil. Stir in onions and garlic until soft. Add flour and stir for 2 mins. Now add canned tomatoes, sauce, barley, broth, salt, pepper, canned beans, herbs and leave it on medium/low for 20 mins until barley is cooked. Add 1/2 cup water if it is too thick. Finally, add milk. Stir and remove from stove. You can taste and add salt/pepper/red chili as needed.
